Reporting to the Executive Director, The Village Chef/Dining Services Manager must be equally professionally, socially and artistically competent. They are accountable to lead food and beverage operations within a dementia-supportive registered Assisted Living and licensed Complex Care community.
They are accountable for the following activities and outcomes in a registered Assisted Living and licensed Complex Care community and household setting:
ACCOUNTABILITY OBJECTIVE
The Village Langley Chef/Dining Services Manager is responsible for food preparation, employee management, administration and exemplary service to, and engagement of, Villagers and their families. Administrative job duties include managing inventory, merchandising, controlling expenses and product quality, inspecting stores and invoicing all within the guidelines of licensing and regulatory standards.
BACKGROUND/QUALIFICATIONS
Has completed a minimum of grade 12. Has experience in business administration and a minimum of 2 years of experience in a similar hospitality setting, serving older adults. Has obtained Red Seal and Food Safe Level 2 certification (or equivalent). Written and verbal fluency in English is required. Has proficient computer skills (i.e. Word, Excel, and familiar with online ordering systems and dietary software). Has demonstrated excellent leadership skills. A Resident-oriented individual, whose visions and values align with those of The Village Langley.
KEY RESPONSIBILITIES
- Participates in the Verve Quality Improvement (VQI) program.
- Leads The Village Langley’s food and beverage program including: The Oakwood Community Centre commercial kitchen, café and bistro, General Store, household serveries and catering program.
- Partners with Village teams to plan and host a variety of hospitality-related social events and community activities to enrich the lives of people with a diagnosis of dementia.
- Designs an appetizing and well-balanced, nutritious menu in accordance with Canada’s Food Guide, and the dietary needs and wishes of Villagers. Ensures weekly menus have been approved by a registered dietician including in-season local products.
- Orders and supervises the distribution of Villager meals. Monitors Villager diet and texture to ensure safe dietary consumption. Ensures that food samples and temperature records are taken and labelled as per regulations.
- Creates the standard for plating and garnishing meals in an attractive and dementia-enabling manner. Enhances selection through menu options and a variety of condiments. Ensures an assortment of alcoholic beverages are available.
- Confirms that there is a “Chef’s Call” for all dining service staff prior to service.
- Initiates audits regularly for feedback, participates in interdisciplinary meetings regarding nutritional issues, and chairs the food advisory/ Villager food committee meetings. Attends regional dining services meetings.
- Recruits, interviews and selects new employees. Serves as a leader and helps develop employees to ensure exemplary service and professional standards are achieved. Conducts annual performance appraisals and addresses performance issues. Oversees and prepares staff scheduling to include shift changes, vacation and leaves of absence.
- Plays a role in the development, modification and/or communication of The Village Langley and Verve Senior Living policies and procedures. Complies with all relevant corporate policies and procedures.
- Complies with the Occupational Health and Safety Act, Workplace Safety and Insurance Act, and Workplace Hazardous Material Information Systems.
- Completes training/education in hospitality services and best practice in dementia-support.
- Provides input into the preparation of the capital and operational budgets. Manages departmental finances, including inventory. Helps to promote initiatives that general revenue (i.e. staff and guest meals, buffets, etc). Provides input for variance reports on financial statements.
