As the Food Service Supervisor, you will lead the team in co-coordinating food production, meal preparation and ensuring all staff maintains the standards for quality and service at all times. The Food Service Supervisor also ensures that safe work practices are followed and all sanitation standards are met.

The Diet Technician is responsible for ensuring diet orders are compliant and meet the provisions for nutritional care as determined by the RD to inpatients and outpatients using our nutrition software program. The diet technician is the liaison between clinical nutrition and food services.

WORK PERFORMED
Your role as the Food Service Supervisor & Diet Technician includes but is not limited to the following:
  • Provides work direction, supervision and on-going training to all assigned staff in a manner which establishes and maintains high staff morale
  • Assists in scheduling, payroll and performance management as assigned
  • Promotes and maintains excellent customer relations and effective on-going communication with all levels of staff
  • Places orders, maintains accurate and timely inventories and provides daily reports related to cost control
  • Assist with planning and executing special assignments/projects and any required follow-up
  • Conducts weekly sanitation inspections and establishes corrective action
  • Conducts and participates in staff meetings
  • Ensures that employees work in compliance with established safe work practices and procedures
  • Ensures that equipment and safe and healthy work conditions are maintained in their assigned area
  • Visits patients to ensure food service quality and preferences are met any other dietary needs
  • Sets up nourishments and marks menus as per standard diet writing guidelines
  • Acts as a liaison between Clinical and Food Service areas
  • Conducts computerized nutritional analysis of menus, recipes and food records
  • Promotes and maintains excellent customer relations and effective on-going communication with all levels of staff and clients
  • Complies with all Sodexo safety and risk management policies and procedures striving for an accident-free workplace

WORK PERFORMED

Head Chef/Food Service Director - Camp Fircom, Gambier Island, BC

Camp Fircom is looking for its next Head Chef. A key member of the Fircom Management team, the Head Chef will provide vision and leadership to our food services. Our groups range from kids camps who want simply fare without too much spice, to corporate groups who want all the extras, to weddings who want a memorable, delicious banquets.

If you are passionate about having access to an organic farm and fresh chicken eggs mere steps from our Dining Hall this is for you. If you have a craving for more time in nature, you’ll be able to walk on the trails only steps from the kitchen and eat lunch while watching seals sunbathe on the rocky shore. A mere 20 minute boat ride from Horseshoe Bay, this kitchen job is close to the city, but away from it all.

Camp Fircom is an off-grid facility and we process all our food waste through the farms two composting systems. Applicants with a passion for sustainability, zero-waste, and permaculture are encouraged to apply.

WORK PERFORMED

The Chef/Food Service Director is responsible for all food services provided for rental groups and our summer camp programs and retreat. The Chef manages all kitchen personnel and food service programs. The Chef/Food Service Director will represent the camp and its mission and goals to its campers, guests, partners, neighbors and the public.

  • Hire, train, and supervise all kitchen and farm staff (paid, interns and volunteer)
  • Schedule kitchen and farm staff shifts
  • Offer ongoing evaluations to departmental staff to improve and excel at their roles as well as year-end reviews.
  • Model professional, enthusiastic, service-focused leadership to staff, campers, volunteers, renters
  • Manage the Farm Coordinator in crop planning for both kitchen ingredients and retail sales
  • Plan menus for the groups on site while creating alternate options for guests with food allergies and special diets
  • Oversee the food service delivery for all groups at camp.
  • Directly cooking three days per week in the high-season, particularly over weekends groups, such as weddings. There are 14 weddings, various retreats, camps programs, tuck shop, and outdoor school groups and they are eating three meals and two snacks a day. Up to 180 people per day during July and August.
  • Order food supplies within budget and at best price for value
  • Monitor food prices and adjusting menus to meet price fluctuations.
  • Manage food waste created in the front and back of Dining Hall as all waste is composted at camp.
  • Communicate with the Executive Director, Rentals Manager, Summer Camp Manager regarding overall functioning of food services
  • Working in collaboration with the Fircom management team in striving to fulfill the mission of Camp Fircom
  • Maintain required health standards (Provincial Standards, BCCA accreditation, UCC Accreditation) Ex. Maintains daily/weekly logs re: temperature of fridge.
  • Notify and support the Facilities & Maintenance department of kitchen maintenance.
  • Have a working knowledge of the Fircom’s Policies and Procedures Manual & Risk Management Manual
  • Be aware and alert of any new or impending risks and convey this to the appropriate authority
  • Submit a Food Service Director’s Report within a report format at the end of contract
  • Supply adequate information within deadlines for website content in form of blogs and social media posts
  • Other duties as required

QUALIFICATIONS

  • Ability to work all shifts, weekends and holidays as per schedule and within contract guideline
  • Experience as a professional cook for large groups in a hotel, catering, event, or camp situation
  • Experience hiring, training and supervising staff and volunteers
  • Proven skills with coordinating food orders and food transportation
  • Track record of food budgeting and costing
  • Knowledge of the Occupational Health and Safety Act (Food Safe) and those regulations made under the Act that apply to a supervisor and to the workplace
  • Knowledge of basic organic farming principles and experience in a working farm and/or composting system
  • Food Safe Level 2 certification

Reporting directly to facility General Manager and/or designate and as a member of the facility leadership team the Support Services Manager is accountable for all aspects of the day to day delivery of Food, Housekeeping and Laundry services in accordance with established regulations and corporate standards and expectations.

The Support Services Manager provides oversight, supervision, and constructive direction to assigned staff and acts as a professional role model while representing the Support Services departments.

WORK PERFORMED
Include but not limited to: Supported by the site General Manager and the Corporate Hospitality Support Services Manager,

  1. Participates in the development of and ensures compliance with Corporate and site specific standard operating policies, procedures and other operational foundations required in the provision of Food Services, housekeeping and laundry services.
  2. Participates in the management of assigned budgets.
  3. Participates in the development of operational plans and goals for each department consistent with the facility / organization’s mission and strategic plan.
  4. Gathers and tracks performance indicators and other surveys accurately; analyze and report to the management team as required. 
  5. Performs and /or delegates ordering, receiving and related procurement tasks ensuring compliant application of procedures and policies.
  6. Establishes and maintains inventory supply levels utilizing methods that minimize spoilage, loss and waste.
  7. Hires, disciplines, recommends, orients and / or participates in the termination of staff according to established HR policies and procedures.
  8. Coordinates Food Services, HSPK and LNDY related in-services and annual educational opportunities for staff.
  9. Evaluates staff work performance & recommends strategies for improvements as necessary.
  10. Plans and delivers seasonal menus and high quality food that are compliant with all related regulations, fit the resident’s nutritional and therapeutic needs, and meets the facility and resident’s expectations.
  11. Develops and / or adjusts standardized recipes to ensure consistent high quality production outcomes including quality, nutritional & texture requirements, quantity, portion sizes, and resident satisfaction.
  12. Coordinates regular department meetings and participates in facility based meetings such as site leadership, OH & S, and others as required.
  13. Works with other facility departments in the planning & delivery of special events / meals and programs as required.
  14. Plans, directs and implements continency plans in response to emergencies and / or challenges to or interruptions in services.
  15. Perform other duties as required.

QUALIFICATIONS

  • Graduation from a recognized program in Nutrition and Food Services Management
  • Member in good standing or eligibility for membership in the Canadian Society of Nutrition Management and/or Registered Dietician mandatory
  • Food Safe Level 1 mandatory; Level 2 an asset
  • A minimum of two years Support Services (Food Services / HSPK & LNDY) supervisory experience in a geriatric residential setting including direct experience managing staff.
  • Experience managing unionized staff an asset.
  • Must have strong leadership skills.
  • Must have a passion for high standards in customer service, food safety, physical space, environmental cleanliness and infection control protocol.
  • Professional appearance and good physical health
  • Demonstrated effective planning, time management and organizational skills
  • Ability to work independently with minimal supervision
  • Ability to operate related kitchen, housekeeping & laundry equipment
  • Excellent written and oral English skills.
  • Sound knowledge of MS Office Applications.
  • Ability to handle multiple tasks at one time.
