Work Performed:

  • Oversees the function of all Food and Beverage team members, facilities, sales, and costs to ensure maximum departmental profit is achieved.
  • Review and evaluate the degree of guest satisfaction to recommend operating and marketing policies whenever a change in demand, customer dissatisfaction, or a change in the competitive environment requires such changes.
  • Develop and recommend the budget, concepts, and objectives and manage them within those approved plans. Achieve/ exceed annual budgets.
  • Coordinates with the Exec. Chef for the preparation, presentation, and service of Food and Beverage products to ensure the highest quality at all times.
  • Keeps aware of trends, systems, practices, and equipment in F&B preparation and service in the hotel and restaurant field through trade publications and actual visits.
  • Monitor, analyze, and control all labor and inventory costs. This includes preparing the appropriate reports, charts, and schedules to ensure that budgets are met or exceeded while quality is maintained and improved.
  • Coordinate with Sales and Marketing the promotion of the dining outlets and future events and promotions.
  • Designing and implementing new department operating policies and procedures as required.
  • Ensure occupational health and safety standards are maintained throughout the hotel and are in compliance with local, state, and federal laws. Follow up on items requiring actions from the Occupational Health & Safety Committee.
  • Exercise Serving it Right parameters and maintain complete knowledge and strictly abide by liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and impaired driving.
  • Check storage areas for proper supplies, organization, and cleanliness.  Instruct designated personnel to rectify any cleanliness/organization deficiencies.
  • Conducts daily pre-shift meetings with dining room supervision and staff.
  • Maintains a consistent focus on cleanliness throughout all areas.
  • Participation in rotation of Weekend Manager on Duty.
  • Attend Rosewood Daily Review and ensure that departmental daily reviews are conducted for every shift with the department.
  • Hire, train and manage, supervise, develop, discipline and counsel all food and beverage team members according to Rosewood policies and procedures.
  • Attend weekly Heath Labor-Management meetings and ensure that daily and weekly labor-management procedures are followed.
  • Model a professional, helpful and courteous manner when dealing with guests associates to reflect the Rosewood Brand Standards.
  • Be a “brand ambassador” at all times and ensure brand integrity and clarity in everyday actions and conducts.
  • Other duties as required and assigned.

Qualifications:

  • Must have a minimum of three years of previous Food & Beverage management experience in a luxury hotel environment.
  • High school diploma. Diploma/Degree in Hospitality/Culinary Management preferred with a proven record in delivering operating results in high volume banquet operations in four/five-star hotels.
  • Must be proficient in MICROS, knowledge of Microsoft Office.
  • Must have excellent presentation and be extremely guest-focused.
  • Must have attention to detail and have the ability to multi-task; follow up and leadership skills required.
  • Must be able to exert physical effort in transporting 75 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding.
  • Licenses & Certifications: Serving it Right, Food Safe.
  • Fluency in written and oral communication in English. The additional language will be an asset.
  • Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.

  • Current qualification as a chef and in possession of a Food Service Supervisors certificate;
  • Minimum of one year experience in front of house and customer service;
  • Prior labor relations experience preferred;
  • Excellent communication skills (both written and verbal);
  • Effective interpersonal and conflict resolution skills;
  • Good organizational and time management skills with the ability to multi-task;
  • Customer service oriented;
  • Must have working knowledge of special diets;
