Chef Manager - Hamilton Village, Richmond, BC

Job Summary

Responsible to manage the day to day operations of all Food Services Compass provides within the home. The primary responsibility is to ensure that all areas of the operation meet and maintain compliance with Compass, Client and all licensing standards and requirements, including but not limited to established standards of Quality Assurance, Health & Safety and Infection control procedures.

Essential Duties and Responsibilities:

  • Must ensure the nutritional and therapeutic requirements of the residents are met through menu planning, the development of standardized recipes, and production sheets.
  •  Prepare, monitoring and evalute meal preparation and service to ensure established standarts are maintained for both quality and profitability of all meals and snacks.
  • Facilitating ongoing communication with all stakeholders at the home, including administration, nursing, residents and their families.
  • Recommend and implement preparation to reduce costs and supervise all kitchen personnel to ensure correct methodologies are followed. 
  • Ensure the Food Safety Plan is followed, as well as HACCP, WHIMIS, and all WCB regulations for a safe work place.
  • Prioritize and delegate tasks in kitchen layout and prep. 
  • Ensure all products and ingredients required are delivered in a timely manner for prompt delivery to kitchens and clientele. 
  • Ensure food ingredients are stored in their designated area and rotated in the proper manner. 
  • Assist Food Service Director in maintaining accurate daily production records and complete all required documentation, reports, and logs as assigned.
  • Support manager of Support Services with scheduling, hiring and disciplining of all support service staff in accordance with Company and Government standards.
  • Train employees; plan, assign and direct work; appraise performance; rewards and discipline associates; address complaints and resolve problems.
  • Advise management of purchasing requirements with a focus on minimizing waste and avoiding product shortages.

Qualifications:  

  • Minimum of one year previous supervisory experience or equivalent.
  • 12-month Diploma from a recognized cooking school or equivalent combination of education, training and experience.
  • Current and maintained Basic Food Safe Certification required at hire (Basic must be upgraded to Advanced Certification within 6 months of hire).
  • Excellent customer and client relationship skills.
  • Excellent communication skills (written and verbal).
Important note: **A satisfactory Criminal Record Check is a condition of employment. Proof of immunizations and Tuberculosis Screening Test results may be required.**

What we need from you:

  • Certified in Nutritional Management with eligibility to join the Canadian Society of Nutritional Management.
  • Must remain in current standing with CSNM
  • Minimum two years management experience in a large complex care facility or retirement community.
  • Must have working knowledge of Therapeutic diets.
  • Must be current knowledge of residential guidelines according to the health authority.
  • Ability to be “on-call”.
  • Must be able to effectively communicate verbally and in writing in English.
  • Ability to travel if necessary.
  • Must be willing to work the hours necessary to ensure the effective operation of the facility
  • Holds and Maintain Valid Food Safe Level 1 Certificate
  • Holds and maintains Valid WHIMS Certificate
  • A negative TB test or chest x-ray within the last six months or ability to pass TB clearance documents.
  • Clear Criminal Record Check, including vulnerable sector, through the Ministry of Justice upon hire and every 5 years thereafter.

POSITION:  DIET TECHNICIAN/FOOD SERVICE SUPERVISOR
LIONSGATE HOSPITAL and EVERGREEN HOUSE
OBJECTIVE:
The Diet Technician is responsible for assisting the Clinical staff in the provision of Nutritional Care to inpatients and outpatients using Computrition.  In carrying out assigned responsibilities, the incumbent must ensure that all staff under his/her supervision complies with client, corporate and division policies, procedures and regulatory requirements.

The Food Service Supervisor is responsible for coordinating food production and ensuring that supervised staff maintains the standards for quality and service at all times. The Food Service Supervisor also ensures that safe work practices are followed and all sanitation standards are met.

RESPONSIBILITIES:
§ Checks diet acceptance and suitability
§ Performs clerical duties and assists with planning and executing special assignments & follow-                           up
§ Sets up nourishments and marks menus as per standard guidelines
§ Acts as a liason between Clinical and Food Service areas
§ Conducts computerized nutritional analysis of menus, recipes and food records
§ Promotes and maintains excellent customer relations and effective on-going communication with all levels of staff and clients.
§ Provides work direction, supervision and on-going training to all assigned staff in a manner which establishes and maintains high staff morale.
§ Assists in scheduling, payroll and performance management as assigned.
§ Promotes and maintains excellent customer relations and effective on-going communication with all levels of staff.
§ Places orders, maintains accurate and timely inventories and provides daily reports related to cost control.
§ Assist with planning and executing special assignments and any required follow-up.
§ Conducts weekly sanitation inspections and establishes corrective action.

§ Ensures that employees work in compliance with established safe work practices and procedures.
§ Ensures that equipment and safe and healthy work conditions are maintained in their assigned area.
§ Supports the Safety Program and reports all injuries and hazardous conditions immediately.
§ Other tasks, duties and assignments as directed by the Manager.

POSITION REQUIREMENTS:
§ Diploma in Food and Nutrition Management or Degree in Dietetics.
§ English proficiency, verbal and written.
§ Food Safe Certificate I & II
§ Current vaccinations, TB screening test, Hep A & B, Flu shot.
§ Requires knowledge of clinical diets and ability to plan and mark clinical diet menus
§ Current vaccinations.
