JOB SUMMARY
Position: Senior Food & Beverage Manager
Job Location: The Westin Bear Mountain Golf Resort & Spa Victoria, 1999 Country Club Way, Victoria, BC, Canada
Type: Full-time

Work Performed:
Operations, Budgets and Profitability
  • Manages all F&B and Culinary day-to-day operations.
  • Achieves budgeted revenues & expenses and maximize profitability related to the food & beverage department.
  • Measures, analyzes, and communicates F&B financial performance using a variety of financial and non-financial data including controllable costs, sales revenue, guest satisfaction, and employee engagement data.
  • Ensures compliance with business operations, rapidly changing Provincial Health orders and legal regulations.
  • Complies with all Food Safe and Serving it Right regulations
  • Implements & manages all company programs to ensure compliance with SOP’s.
Business Strategy Development and Execution
  • Executes rebranding of the renovated outlets and banquets to better align with changing hotel guest profile and local clientele.
  • Stays current with industry trends and monitors strengths and weakness of competition.
  • Develops and executes business plans designed to maximize property customer satisfaction, profitability, and market share.
  • Experiments with new ideas and takes calculated risks to improve guest satisfaction and profitability.
Sales and Marketing
  • Markets the food & beverage outlets, develop and manages the implementation of menus, package deals, promotions, displays, decorations and presentation within corporate guidelines to meet / exceed sales and financial goals and objectives.
  • Identifies and champions creative marketing solutions that fit the brand and property needs.
  • Oversees the development and implementation of innovative promotional and sales events by seeking out creative ways to improve service and increase business volumes.
  • Develops innovative means for capturing new streams of revenue through newly created and renovated facilities such as brewery and meeting & banquet spaces.
  • Works with sales and marketing teams to establish and manage strategic plans, goals, and action plans.
Staff Management
  • Ensures staff adhere to Standard Brand and Operating Procedures, Safety and emergency protocols, including COVID-19 protocols and Staff Policy Manual.
  • Ensures staff have a deep understanding and respect for customer service standards.
  • Provides timely, real-time feedback to managers and hourly employees on service and operational standards, including feedback and reinforcement of standards on even the smallest of service and operational details.
  • Creates and supports clear lines of responsibility for management team, including coverage and oversight throughout the day.
  • Coordinates, attends, and leads department meetings.
  • Hires, motivates, develops, and manages workforce performance.
  • Ensures high performers are retained.
  • Motivates, coaches, and develops staff to ensure the best results.
  • Manages performance and non-performance.
  • Encourages innovation.
  • Delegates effectively.

Qualifications:
Technical Skills
  • Familiarity with all aspects of F&B Operations.
  • Proven people management skills
  • Strategic planning and execution.
  • Change management and strong leadership skills during challenging times, example: COVID-19, major renovations.
  • General IT skills including working knowledge of MS Office suite.
  • F&B POS and Marriott hotel systems: Oracle Micros Galaxy Lightspeed and CI/TY
Experience/Education/Training
  • A minimum of 5 years’ F&B management experience as a F&B Manager in a convention, major chain restaurant or full-service hotel F&B operations.
  • 2-4 year degree/diploma from an accredited university in Hotel and Restaurant Management, Food service or related professional area.
  • Previous experience successfully improving business performance and results.
