JOB SUMMARY

Position: Director, Culinary and Beverage

WORK PERFORMED
  • Inspire and drive innovative experiences and activations, menus development and concepts; creating a destination of choice for both Hotel and external guests
  • Lead and manage the day to day operations of the Food & Beverage division ensuring all service standards are followed
  • Lead and support all Food & Beverage departments in the achievement of their financial and operational targets
  • Prepare annual budgets and administer in a fiscally responsible manner
  • Implement effective control of food, beverage, labour and operating expenses throughout the Food & Beverage division
  • Assist in the preparation of the annual strategic plan and achievement of the goals and targets therein
  • Ensure the implementation of standards in guest service and constantly seek out ways to improve product and service as well as increase volumes and profits
  • Oversee the selection, training and development of all Colleagues to ensure timely recruitment and career growth
  • Promote and ensure health & safety at all times utilizing the ServSafe and EcoSure programs in line with Vancouver Coastal Health regulations
  • Meet daily with the Food & Beverage leadership team to communicate and address operational challenges and successes
  • Lead Food & Beverage Revenue Management meetings and strategy
  • Facilitate weekly meetings with the Director of Marketing and Public Relations, promoting the Food & Beverage direction and activations
  • Control all Food & Beverage purchases and inventories while maintaining Food & Beverage cost targets within budgeted guidelines
  • Other duties as assigned

QUALIFICATIONS

  • Minimum 10 years' experience within various areas of the culinary field including a tenure as an Executive Chef in a property of significant size and complexity including a mix of restaurant and Banquet experience
  • Proven strong leadership with specific strengths in quality production and innovative style
  • Proven ability to achieve fiscal targets through implementation of inventory control logistics
  • Foodsafe certification required
  • Proven ability in attaining targets in all key measurements (Colleague, Guest, Financials, Brand, and Health & Safety)
  • Computer literate in Microsoft Windows applications required
  • University/College degree in a related discipline
  • Strong interpersonal and problem solving abilities
  • Highly responsible & reliable
  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively as part of a team
  • Ability to focus attention on guest needs, remaining calm and courteous at all times
  • Ability to work a flexible schedule that meets business demands, including mornings, evenings, weekends, overtime shifts, and holidays
