Position: Food and Beverage Service Manager, Senior

Type: Full time
Job salary: $90,200 - $114,000 per year.

Work Performed:
  • Provides leadership, development plans and coaching for direct reports.
  • Responsible for the Profit and Loss accountability for Food and Beverage front of house operations based on approved board budgets (and forecasts). This includes providing input into the annual budget process and regular re-forecasting throughout the year and weekly profitability reporting for all Food and Beverage outlets.
  • Oversees the Food and Beverage front of house operations, and provides assistance where required to the Casino Operations, Guest Services, and Purchasing departments.
  • Assists in developing and implementing initiatives and promotional activities to drive revenue growth in Food and Beverage in collaboration with Marketing.
  • Develops systems and procedures that achieve higher cost efficiency, particularly labour.
  • Works closely with all department managers including casino operations to identify cross marketing opportunities and facility wide promotions.
  • Retains guests and enhances guest loyalty through implementation and maintenance of a loyalty retention program.
  • Manages recruitment, training and staff development to enhance the strength and effectiveness of staff and managers’ ability to achieve strategic and operational objectives.
  • Provides operational leadership and decision making on technical and incident related issues.
  • Offers customer service training and guidance to managers and ensures the delivery of operational excellence in customer service for all food and beverage departments.
  • Works with the Culinary Management Team in the area of cuisine, menu planning and design.
  • Ensures compliance with food handling requirements and regulations.
  • Ensures compliance with liquor service and regulations.
  • Ensures compliance with provincial regulations including health and safety.
  • Ensures scheduled inspections and regular maintenance of equipment is undertaken.
  • Stays informed about local, national and international best practices/trends in food service, interior design, technology and entertainment in Food and Beverage.
  • Maintains a thorough and updated knowledge of company policies and procedures.
  • Takes on additional responsibilities as required.

    • Able to implement operational change
    • Proven leadership skills – able to direct and supervise staff and able to promote teamwork
    • Business acumen
    • Proven costing and pricing techniques
    • Experience in menu planning and design an asset
    • Excellent written and verbal communication – including ability to write external submissions
    • Strong customer service skills
    • Excellent problem solving skills
    • Self motivated, detail oriented, reliable, punctual, efficient and able to multi-task
    • Working knowledge with word processing software, spreadsheets, email, Internet navigation, and presentation software
    • Willing to work reasonable overtime as business needs require
    • Minimum 5 years of Hospitality Management experience
    • Proficiency with MS Office - Word, Excel Outlook 2007 or later
    • Post secondary education in hospitality management or a related field an asset
    • Current Serving It Right Certification
    • Current Food Safe Certification
