JOB SUMMARY

Position: Director, Food & Beverage

WORK PERFORMED
  • Supporting leadership and acting as a mentor to the Western Operations food and beverage team
  • Developing performance objectives and delivering performance evaluations targeted to improving food & beverage operations at all levels.
  • Developing, finalizing, implementing, maintaining and monitoring food and beverage and liquor controls through team member acknowledged standardized policies and procedures and /or user guides.
  • Ensuring premium quality, service, innovation and promotion
  • Developing strategic plans including menu design, planning and promotions, team recruitment, development and training.
  • Acting as a resource for all food and beverage Department Heads
  • Conducting analysis of current trends and execution of critical reports or measurements to create a competitive advantage within the industry and/or specific markets.
  • Driving cross-functional, cohesive communication and alignment to ensure efficient operations throughout all Western food and beverage levels and with all relevant stakeholders, including protection of guest service.
  • Developing and cultivating strong working relationships with all stakeholders: guests, leadership group and team members
  • Measuring consistent execution of menu/product offerings to ensure alignment with company standards, and specific outlet business plans.
  • Measuring and accountability for food and beverage revenues and profit for all Western food and beverage operations
  • Supporting execution of company programs, partnerships and agreements
  • Evaluating compliance with licensing laws, health and safety and other statutory regulations
  • Managing other initiatives as directed
  • Exemplifying managing by accountability, communication and compassion.
  • Supporting food and beverage financial strategies by anticipating requirements, trends and variances; co-developing budgets and capital expenditure plans; developing action plans, measures and analyzes results, minimizing the impact of variances
  • Building trusting partnerships with third-party contractors and consultants to drive efficiency and create savings.
  • Ensuring all sites maintain safe, secure, legal and healthy work environments by establishing, following and enforcing sanitation and quality of food and beverage preparation and service standards and procedures; monitoring conformance to the regulations of the alcoholic beverage commission; enforcing sanitation and legal regulations of all kitchens, bars and service areas.
  • Championing and participating in events for the Company’s PROUD program.
  • Managing other initiatives as required

QUALIFICATIONS

  • A passion for providing Great Experiences and Memories to our internal and external guests in the continual quest of achieving Service Excellence
  • Four-year business degree, or a suitable combination of education and relevant experience; minimum of 5 years’ management/leadership experience in progressive food & beverage roles with proven outcomes managing multiple concepts and outlets.
  • Experience developing successful culinary concepts for casual/luxury outlets.
  • Red Seal culinary certification, preferred
  • Experience working with local, regional and national vendors and in a regulated industry
  • Advanced experience and understanding of casinos or large multi-venue properties with experience in outlet openings
  • Serving it Right Licensee Certification and Food Safe level 1 and 2
  • Experience working for a regional or national restaurant chain where standards are used to ensure consistent quality is achieved across a portfolio of operations.
  • Ability to lead and influence diverse teams during change, while maintaining cooperation, motivation and cohesiveness
  • Thorough knowledge of all federal, provincial and local health regulations
  • Solid skills in MS Office and POS management
  • Ability to successfully obtain gaming registration through the Gaming Policy and Enforcement Branch (GPEB)
  • Strong working knowledge of both back of house and front of house operations, with proven ability to coach and train team members in both areas.
  • Prior experience developing and leading dining programs.
  • Ability to travel from various locations throughout the Company’s Western Operations or based on business needs.
  • In possession of a valid driver’s license
  • Ability to develop and maintain effective relationships with clients, vendors, team members, executive leadership team and ownership.
  • Proven record of effective written, verbal, and non-verbal communication skills
  • Knowledge developing strategies, unique products, concepts and delivery with proven ability to develop and lead diverse work teams across multi-functional areas.
  • Successful ability to self-motivate, self-direct, problem solve and achieve desired results.
  • Extensive knowledge of P&L, budgeting, forecasting, accounting & management expertise related to food and beverage management; to include, inventory control, product cost, waste.
