WORK PERFORMED
Oversee the operations of the Food and Beverage department. Determine concession menu and pricing. Ensure proper sanitation and health and safety regulations are adhered to. Oversee daily operations to meet and maintain municipal, provincial and federal regulations concerning quality, purchase, storage, preparation and serving of food. Attending courses to upgrade knowledge as required. Coordinate the activities of Supervisors and/or workers operating kitchen equipment, preparing, portioning and serving food. Develop the Food and Beverage team by coaching, mentoring, counseling, and disciplining; planning, monitoring, and appraising job results. Assist in recruiting, selecting, orienting, and training employees; developing personal growth opportunities. Assist kitchen staff to estimate and order ingredients, food, supplies and equipment required for meal preparation. Determine supplies needed, order supplies and maintain a working relationship with food, beverage, and equipment suppliers and their representatives. Maintain friendly contact with guests and resolve guest complaints. Maintain proper liquor controls. Knowledge of AGLC regulations is required. General knowledge of the Food Services budget to monitor revenues and expenses on a monthly basis. Maintain records of costs and payments to suppliers. Be aware of promotional & special events, private bookings, corporate and group functions in order to relay and help direct staff for these events. Maintain and promote staff morale through positive attitudes and social aspects of the working environment. Perform other responsibilities when required. Work closely with the Food and Beverage Manager to oversee the coordination of Banquets. Oversee food and beverage arrangements for banquet events based on contracts provided. Supervise the set up and tear down of guest tables & chairs, display tables and buffet tables. Compile staff schedules, place food orders and coordinate food service during the event. Maintain relationships with banquet clients during the events. Assist with the selection of banquet menu items that will appeal to customers and make efficient use of food and beverage supplies. The length of a working day may vary depending on how busy the department is or deadlines that need to be met for a particular project.
QUALIFICATIONS
- Post-secondary education in Food Service Administration, Hotel Restaurant Management or related discipline is an asset.
- Pro-Serve Certification is required.
- Ongoing completion of course work, seminars &/or workshops is recommended to stay current in the industry.
- A combination of experience and education in the food services industry is required to be successful in this role.
- Must possess strong analytical skills to perform business functions such as cost analysis, budgeting, and expenditure evaluation.
- Strong computer and business administration skills are required.
