JOB SUMMARY

Position: Sous Chef

WORK PERFORMED
  • Responsible for preparing and plating meals from the planned menu for Villagers and guests in accordance with sanitation and safety regulations using methods best suited for the nutritional quality and appearance of food
  • Daily oversight for the preparation of food
  • Assists dining room service as required and directed by the Dining Services Manager
  • Responsibilities may include baking, cutting, preparing foods, and plating meals to Verve standards throughout the dining service
  • Responsible for receiving and putting away orders.
  • In the absence of the Dining Service Manager is responsible for purchasing of food and supplies for the department as per established company procedures, and the smooth functioning of the Dining Service Department
  • Responsible for completion of food temperature checks and proper documentation as assigned
  • Participates in the ongoing Fire Prevention, Pest Control, Occupational Health and Safety, Continuous Quality Improvement Programs, and any other programs as required
  • Comply with all of The Village Langley and Verve Senior Living policies and procedures
  • Completes all required mandatory training and education
  • Committed to excellence and the establishing a positive Villager and guest experience
  • Responsible for cooking and preparing dinner menu items and at times will be required to cook and prepare lunch menu items in accordance to Verve standards. Cooking techniques could include but are not limited to braising, sautéing, pan frying, over night cooking, etc.
  • Baking as required to Verve standards
  • Ensures allergy requirements are properly prepared and plated
  • Assisting in inventory management of ingredients and supplies to ensure necessary products are available to the residents
  • Along with the Dining Services Manager, provides direction/guidance during food preparation and service to the prep cook as well as Cook I and Cook II as required
  • Maintaining and cleaning kitchen equipment and reporting any equipment deficiencies to Dining Services Manager
  • Forecasts food production requirements on a daily basis, implements portion control methods during meal service, and plans for effective utilization of left-over foods
  • Support Village Bistro as required
  • Stock Village General Store as required
  • Liaison with other departments as to special requirements
  • Performs other duties as assigned
 QUALIFICATIONS
  • Nutrition Management Certificate in good standing with the Canadian Society of Nutrition Management (CSNM)
  • Must be able to communicate effectively, both written and verbally, in English Language
  • Must be capable of working in a fast-paced environment
  • Minimum High School diploma required
  • Proven knowledge and experience of food preparation, cooking and plating techniques
  • Food Safe Level 1, WHIMS and Serving it Right certificates or equivalent
  • Completion of Cracking the Dementia Code Certificate
  • Minimum of 3 years’ experience with large volume food cooking and preparation
  • Strong knife and preparation skills as well as fundamental baking skills
  • Required to lift up to 50lbs
  • Dependable, responsible and an ability to work well with others in a team environment
  • Able to work independently
  • Required to renew all applicable food safety certificates as required
  • Formal Cooks' training and/or a combination of experience and training is considered an asset
