Job salary: $130,000 - $140,000 per year

WORK PERFORMED
  • Oversee the entire kitchen, food preparation servers and bar staff. Direct reports will include the Kitchen Chefs and Front of House Managers. However, the role requires direct oversight and management of all Food & Beverage staff.
  • Meeting vendors and negotiating product pricing.
  • Developing restaurant and bar menus and menu item costing.
  • Assist in the ordering of Food and Beverage products, supplies, cleaning supplies and uniforms.
  • Supervise daily F&B shift operation and monitors compliance with all F&B policies, standards and procedures.
  • Developing inventory controls and processes.
  • Supervise staffing levels to verify that guest service, operational needs, and financial objective are met.
  • Encourage and build mutual trust, respect, and cooperation among team members.
  • Develop specific goals and plans to prioritize, organize, and accomplish work.
  • Develop staff labour schedules. Monitor and maintain the productivity level of employees.
  • Work with the Casino’s controller to develop and maintain a financial operating budget and verify that standards and legal obligations are followed.
  • Coordinating with the Casino’s marketing manager to promote F&B specials and events.
  • Assist supervisors in understanding team members ever changing needs and expectations, and how to exceed them.
  • Establish and maintain open, collaborative relationships with employees.
  • Stay readily available/ approachable for all team members.
  • Manage day-to-day operations, monitor quality, and standards and meet the expectations of the customers on a daily basis.

QUALIFICATIONS

  • 5+ years experience as a Food & Beverage Director.
  • Knowledge of Oracle Micros Food & Beverage POS.
  • Experience with negotiation and coordination of menu food selection and procurement with vendors.
  • Experience creating & managing efficient schedules and labour budgets based on food & beverage sales.
  • Ability to work well under pressure.
  • Ability to manage multiple locations.
  • Competitive compensation will be based on experience and education. Compensation includes a discretionary annual bonus based on KPIs, individual and family health, life insurance and dental benefits as well as an RRSP program.
