WORK PERFORMED
- Food Preparation and Planning; Test new recipes; Plan and develop LTC (Long-Term Care) menu and Retirement menus to meet Ministry and Provincial guidelines; Ensure compatibility with the meal delivery systems used in senior dining; Ensure food quality standards and cost control; Support on-going culinary and concept development
- Training and Development; Teach employees new techniques/ideas, texture-modified diets and basic cooking from recipes
- Product Safety and Purchasing; Ensure product development is within the nutritional and cost parameters; Act as a lead and a liaison between purchasing and Senior Living Healthcare to source food products and environmental services products as required
- Support Account Managers and Buyers on purchasing and distribution-related issues
- Support new unit opening and implementation to ensure new account is set up with Compass purchasing compliance, inventory and production processes
- Assist with quality assurance product safety audits
- Post-secondary education; Culinary Designation or Culinary Arts Diploma, Red Seal required
- Minimum 3 years’ experience in LTC (Long-Term Care) or a large healthcare facility in a fast-paced dynamic environment
- Experience in cold plating, ready prepared products, alternative meal delivery systems and conventional cook techniques
- Proficient in Microsoft Office
- Exceptional interpersonal skills with excellent written and verbal communication skills
